Last night I made this.   Except instead of almonds, I made it with cashews.  Still very tasty.

I was watching Everyday Food on PBS this weekend and thought, “I can do that.”  The Huz wants me to try it using pecans instead of cashews next time.

Sometimes cooking gluten/dairy/corn free and Feingold Friendly is a wee bit depressing.  When I take my old recipes, and try to convert them, they never come out tasting right.  It’s much easier for me to modify new recipes rather than old favorites.  I guess if I don’t have any expectations of how something is suppose to taste, then I’m not disappointed with how they taste.

Is that some kind of metaphor for life?

    Oh yes Jess, and it was pretty easy and tasty to boot! We are having wheat/corn/dairy free feingold friendly carrot cake tonight. Can you say YUM?

    And last night we had carrot cake. It was yummy warm and was great for breakfast!

    Is brown rice pasta gluten free? Because DUDE, the one from Trader Joe’s was INCREDIBLE. I picked it up on a whim and have completely switched over.

    Monkey, you may pay too much for rent, but you have wonderful stores near by. We eat a lot of brown rice now, and I’ve tried the brown rice pasta and it is awesome. We don’t eat much past right now, because all the sauces I’m use to making are all tomato or dairy based and we aren’t eating either of those right now.

    If you want, I can mail you a packet to see if you like it. I topped it with their pesto and it was really really tasty.
