We are well into our “eat something different every day for dinner for a month” quest.
You are shocked, I’m sure, that so far we’ve not had to eat anything twice.
Day two we had Marlboro Man’s Favorite Sandwich. I intended to make the grocery list. I intended to cook it. But the foster lab had to go back to the vet to check his ears. And the BoyChild was having a tough week. And as a result David ended up shopping and making the sandwiches while I took the dog to the vet.
And they were o.k. I don’t think that is any indication of how they really are.
David can cook. He can read a recipe and do what it says. But he doesn’t have a flare for it, or a knack for it, or even really like to do it, I think. Consequently, a lot of stuff turns out kind of blah that probably if I’d made it or someone else had made it would have been good. So, I’m not going to mark that one off my list just yet. I’ll make it sometime and THEN decide whether it was blah or whether it was David’s iffey culinary skills.
Day three we had Noodles Marmaduke from All Recipes dot com. It is a stroganoff like recipe that uses ground beef and you cook the noodles in the pan. We’ve had it in our repertoire for awhile and I think I found it when I was on another quest to shake up what we were eating. I took it to work on Friday for lunch. I think it was actually better the next day. The flavors had melded together and were less sharp than they are fresh out of the pan.
I think we also had a simple salad with that, but since I didn’t write it down, I’ve already forgotten. The Noodles Marmaduke has onions, mushrooms and parsley, so I think I probably would have counted those as a vegetable.
On the fourth night we had Mexican food from one of my favorite restaurants. I’m not sure how exactly we are going treat that. There are about three Mexican places near us that we do take out from. We haven’t decided whether we are just not going to count it if we have food from there again or if we’ll just have to have something other than what we normally have there. But since we are making these rules up as we go along, I don’t think that’s going to be a significant problem.
Next up on the menu? Chicken Enchilda’s. We haven’t had them in. Like. For evah. And I’m looking forward to them.

I so love chicken Enchildas!! I use chicken cheese and sour cream. Mix in some black olives, green chilies and onions…YUM!
I have made it as far as printing the baked Sketti recipe. I’ll go today for the ingredients.

Oh post your Chicken Enchilada recipe! I too love Chicken Enchiladas and while we can’t make the recipe we just had, I could make a different recipe of the same dish!
